Oatmeal Cookies!

I tried making protein oatmeal cookies that I had wanted to try for some time. 

I made them on a whim last Sunday, and I probably should have baked them a bit longer (they have a chewy texture rather than crispy), but I take it as a success considering it was my first shot.

For twelve cookies, you need:

  • 60g (two servings) of oatmeal
  • 2 servings of protein (40g) 
  • One egg or 60 ml of plain soy milk

As I mentioned, they turned out chewier than I thought but the flavor was perfectly fine and edible lol

That said, I must admit I had a bit of a hard time making them since it was my first try.

I used to love baking when I was in high school (I would bake something almost every weekend), but it's been forever since my last try, and I have completely lost my touch.

For example, the texture is definitely an issue that needs addressing.

On my next try, I’ll try pressing them down a bit more to make them thinner, and try baking them at 170 degrees for 20 minutes instead of 15 minutes. Also, dissolving protein powder in soy milk before adding it to the oatmeal may make mixing a lot easier; I dumped all the ingredients in a mixing bowl and some of the protein powder stuck to the bottom of the bowl.  I had trouble scraping it down and mixing it all in, making sure that all everything is well combined and evenly distributed.   

I hope mixing protein with soymilk first may help avoid it.
Or, should I try using an egg instead of soymilk the next time? The protein content of an egg is higher than 60 ml of soy milk, so for a higher protein content, using egg is the better option. Wonder if it may change the texture, like, making them crispier rather than chewier. Basically, I don’t mind a chewy texture as long as I can get protein, but I like crispy cookies better if given a choice. 

Either way, it was fun baking my own protein oatmeal cookies. It's a healthy, nutritious snack and I would love to try other oatmeal & protein recipes!
